Sweet Banato Bread

Gluten free, dairy free recipe, which is super quick and easy to make, not to mention delicious and full of healthiness.


Also serves great as rocket fuel for your training days!


  • 200g mashed sweet potato

  • 200g mashed banana

  • 100g coconut flour

  • 4 eggs

  • 60ml coconut milk or natural yogurt

  • 1.5 teaspoon baking soda

  • juice of lemon

  • pinch of salt



For the sweet potato flesh, bung a sweet potato into the oven at around 180degC for an hour or until cooked through. Put all the ingredients into a blender and pulse until well mixed. Spoon into a rectangular bread tin, (sprinkle with some mixed seeds for an extra crunch) and bake for 40 minutes at 180degC. Cover the loaf with tinfoil and bake for another 20 minutes. All done!


To tranform this recipe into a Jamaican Ginger Cake then just add:
  • 1 teaspoon cinnamon

  • 2 teaspoons of ginger powder


This bread is super sweet and moist and makes for a tasty snack spread with nut butter. It's also pretty amazing toasted and served with a cuppa.
