For the sweet potato flesh, bung a sweet potato into the oven at around 180degC for an hour or until cooked through. Put all the ingredients into a blender and pulse until well mixed. Spoon into a rectangular bread tin, (sprinkle with some mixed seeds for an extra crunch) and bake for 40 minutes at 180degC. Cover the loaf with tinfoil and bake for another 20 minutes. All done!
