Good food doesn't get better than this! The recipe is super easy, super delicious, and super healthy. All you have to do is bung all the ingredients into a pot and simmer for half an hour. Serve on a bed of stir-fried green veg topped with a dollop of natural yogurt for an ultra health kick!
500g lean mince
Vegetables to bulk (I use 1-2 peppers, punnet of mushrooms, 1-2 onion)
3 chopped tomatoes
1 tablespoon mixed herbs
1 teaspoon of hot chilli powder
2 teaspoons of smoked paprika
2 teaspoons of cumin
3 cloves of crushed garlic
½ teaspoon of salt
1 teaspoon of pepper (I use some cayenne pepper too for an extra kick!)
2 tablespoons tomato puree
1 carton of chopped tomatoes or tomato passata
Now this is where it gets really tricky so pay close attention to these very complicated two steps...
Brown mince and onion or else just throw all ingredients into a large pot and mix together
Cover and cook on a low heat for 30 minutes
PER SERVING (serves 4)
202 kcal, 14g carbs, 4g fats, 29g protein, 3g fibre
(if using 95% lean mince, which you can buy in Tesco)
