How about some delicious and nutritious homemade taco fries to sizzle your taste buds instead?

 

 

WHAT YOU NEED FOR THE FRIES

  • 2 large sweet potatoes (or 1 ginormous one)

  • 1 teaspoon (coconut) oil

  • 1 teaspoon of cayenne pepper or paprika

  • Salt

 

WHAT YOU NEED FOR THE TACO

  • 500g lean mince (the leaner the better)

  • 1 tablespoon chili powder

  • 1/4 teaspoon garlic powder

  • 1/4 teaspoon onion powder

  • 1/4 teaspoon crushed red pepper flakes

  • 1/4 teaspoon dried oregano

  • 1/2 teaspoon paprika

  • 1 1/2 teaspoons ground cumin

  • 1 teaspoon sea salt (not table salt)

  • 1 teaspoon black pepper

 

WHAT YOU NEED TO DO

 

Preheat oven to 180deg C. Slice the sweet potatoes into whatever configuration you like to eat them in. Skinny fries, wedges, whatever.

 

Melt the oil and mix with your salt and cayenne/paprika. Coat sweet potato with the oily seasoning and place on baking tray. Bake in oven for 40 minutes if wedges, slightly less if skinny fries.

 

For the taco (best part), brown the mince in a bit of oil. In the meantime, to make the seasoning, mix together chilli powder, garlic powder, onion powder, red pepper flakes, oregano, paprika, cumin, salt and pepper. Add the seasoning and around 1/2 cup of water and simmer for 25 minutes or so. Done.

 

Once everything is cooked, serve the taco mince on top of the fries, and top with your favourite toppings, such as cheddar cheese, salsa, and some natural yogurt or creme fraiche.
